What does Possum Pantry sell?

Which freeze-dried foods are allowed under Texas cottage rules?

We sell shelf-stable freeze-dried versions of foods Texas cottage production already allows: dehydrated fruit and vegetables, candy, baked goods that need no refrigeration, popcorn, granola, coated nuts, pickles, roasted coffee and dry tea. We do not sell meat, poultry, seafood, ice cream, raw milk products, low-acid canned foods or CBD/THC foods.

Which size should I choose?

The 2 oz size is useful for tasting or snacking, 4 oz suits regular use, and pantry size is the larger stock-up option. Available sizes vary by product.

What does it taste like?

Freeze-drying removes water, so flavor concentrates and the texture goes crunchy. Keep the bag sealed or it goes soft. Same fruit. Louder flavor. Crunchy.

Can I get a rush order?

Rush and priority are not in the live shop. Pickup time is set when the bags are packed.

Can I order something that is not on the menu?

Only products currently offered in the shop can be ordered online. Menu availability changes as recipes and production standards are confirmed.

Changes and cancellations are open on the tracking page until production starts. Custom Batch deposits are refunded if you cancel while the order is still confirmed.

Who prepares the products?

Possum Pantry sources the ingredients, then prepares, freeze dries, quality-checks and packages every product sold through the shop. We do not handle customer-owned food in the live shop.

What customizations are available?

Choose a 2 oz, 4 oz or pantry size, then optionally select organic ingredients. Organic adds a published percentage upcharge to that item because certified organic produce costs more to source. Standard packaging is included. Preparation is included in the food price.

No. Foods differ in slicing, cooking, freezing and drying needs. The menu includes useful product details while our team follows the full production standard.

Why is the completion time a range?

Cycle length depends on moisture, sugar, fat, thickness, load weight and ambient conditions. The order shows an estimated window, but safety and quality checks determine when a product is ready.

Some foods finish a standard cycle with residual moisture. We continue drying rather than package a product that has not met its standard.

Yes. Trays, chambers, seals and packaging areas may be shared. We use cleaning, scheduling and handling controls, but trace allergen cross-contact cannot be excluded.

The selected product packaging is shown in the shop and order summary. Keep freeze-dried foods tightly sealed because they rapidly absorb moisture from the air.

Shelf life depends on recipe, fat content, residual moisture, packaging integrity, temperature, light and handling after pickup. We do not guarantee shelf life; follow the product label and discard food showing spoilage or damaged packaging.

When do I pick up?

We contact the phone on the order when the bags are packed. Collect during the posted Weatherford window or wait for a Weatherford-area delivery run. Inspect seals and crunch at handoff — an unopened bag that lost its crispness is replaced or refunded.

Does freeze drying kill pathogens?

No. Freeze drying removes moisture, but it is not a kill step and does not pasteurize or sterilize food. Bacteria, viruses, molds, toxins or allergens present before drying may remain afterward.

What happens if production fails?

Equipment faults, power loss and failed cycles can happen. Affected products may be withheld, remade or refunded as the order terms allow. The legal page explains liability limits.

Are you registered with Texas DSHS?

Yes. Possum Pantry is on the Texas Cottage Food Registry as registration #21750 (status: current). Required food handler certification is complete. Bags print Texas DSHS Registration #21750 instead of a home address.

Why is there no street address on the label?

Texas lets a cottage producer who registered with NPAR (in lieu of a physical address) put the DSHS registration number on the label instead of a home address. We use #21750. Pickup is still local in Weatherford by appointment — we contact the phone on the order when bags are packed.

What must be on every bag?

The product name, net weight, ingredients, major allergens, Texas DSHS Registration #21750, and the required line: THIS PRODUCT WAS PRODUCED IN A PRIVATE RESIDENCE THAT IS NOT SUBJECT TO GOVERNMENTAL LICENSING OR INSPECTION.
